My name is Beth Morgan. I am married to my knight in shining armor, Craig. We have 2 adult sons of whom we are very proud.
We have a dog named Archie, who is my great defender, as well as 4 cats: Momma Cat, Kit and Kat and the newest addition, Nilla.. They are great mousers and keep the mice at bay down at the chicken coop!
I started Poor Valley Princess as a way of sharing the traditions and cultures of the little piece of rural Appalachia of which I am a part. I love our way of doing things, our way of speaking, our music, our heritage, and our story telling!
As the world gets smaller, our way of life in the mountains is changing. The great influx of people from different parts of America is changing the landscape of our lives as other cultures bring their traditions into our mountains and valleys.
My goal with Poor Valley Princess is to preserve a way of life that I grew up with and to keep it safe for future generations to enjoy. For my new friends who are moving in from various parts of the United States, I hope this content helps you understand the people of Appalachia just a little bit better.

1 cast iron Dutch oven
Soup:
1 cup carrots
1/2 cup celery
1 small onion
3 tbsp butter
1 1/2 cup all-purpose flour
2 1/2 cups chicken broth
salt and pepper.
2 tbsp thyme
2/3 cup milk
Dumpling:
2 1/4 cup all-purpose flour
1 tsp salt
1 tsp baking powder
1 tsp thyme
3 tbsp melted butter
1/2 cup milk
salt and pepper
1 cast iron Dutch oven
Dumpling:

1 tsp baking powder
1 tsp thyme
3 tbsp melted butter
1/2 cup milk
salt and pepper
Corned Beef Pies
Filling:
1 Can Peas and Corn
1 Can Corned Beef
1/4 cup mayo
Mustard to taste
1 Tablespoon Salt
1/4 Teaspoon Pepper
Mix together and set aside
Roll out biscuit dough, fill with prepared filling. Crimp edges. Slit top. Bake at 350 degrees for 25 to 30 minutes.
Peach Cobbler is a favorite! I learned this one from my momma!
This is such a fun fruit to harvest. The jelly ended up so sweet and similar to blackberry jelly. Give this one a try!
This is a cake that is so fast to whip up when you are in a hurry. My mom made it often when I was young. The interesting part is that you pour the water on top of the batter before baking!
Don't eat this one, but when the kids start complaining about being bored, make this fun dough!
